Well, let's remove the 'guilt' from the 'pleasure' with these gluten-free, sugar-free dark chocolate chip cookies.

2 cups Xylitol

2 Eggs

2 tsp Vanilla Extract

1 tsp Baking Soda

2 tsp Hot Water

Pinch of salt

3 cups Organic Almond Flour

2 cups sugar-free dark chocolate chips of any kind
Instructions:

Preheat the oven to 350° F (180°C) and line a baking tray.

To a blender, add the butter and xylitol and blend together until smooth.

Next, add the eggs in, one at a time, and then add the vanilla extract.

Dissolve the baking soda in the hot water and blend it into batter along with the salt.

Then, mix in the almond flour and chocolate chips, but be careful not to over-mix.

Scoop up spoonfulls of dough at a time, roll it into balls and place it onto a lined baking tray, leaving about two inches in between as the cookies will spread.

Add a few chocolate chips on top of each cookie for decoration.

Bake on the centre oven rack for 10 - 12 minutes or until golden brown.

Remove from oven, place on a cooling rack and allow to cool completely.
