Well, let's remove the 'guilt' from the 'pleasure' with these gluten-free, sugar-free dark chocolate chip cookies.

Ingredients:

Instructions:

  • Preheat the oven to 350° F (180°C) and line a baking tray.

  • To a blender, add the butter and xylitol and blend together until smooth.

  • Next, add the eggs in, one at a time, and then add the vanilla extract.

  • Dissolve the baking soda in the hot water and blend it into batter along with the salt.

  • Then, mix in the almond flour and chocolate chips, but be careful not to over-mix.

  • Scoop up spoonfulls of dough at a time, roll it into balls and place it onto a lined baking tray, leaving about two inches in between as the cookies will spread.

  • Add a few chocolate chips on top of each cookie for decoration.

  • Bake on the centre oven rack for 10 - 12 minutes or until golden brown.

  • Remove from oven, place on a cooling rack and allow to cool completely.

  • Serve and enjoy!
